第一次尝试使用砂锅,就入了这大名鼎鼎的王源吉,王源吉不只卖铁锅,还有紫砂锅,紫砂锅是砂锅里的高级锅,因为紫砂原材料稀缺,含有更丰富的天然矿物质营养元素,所以价格自然也比普通砂锅稍微高一些。
王源吉紫砂锅采用著名的宜兴紫砂,锅盖把手顶部刻有“宜兴紫砂”的四个字样,锅盖内部还刻有“王源吉制”的字样,做工精美,每个字都是刻在锅体上,并不是印上去的花纹,而且这款紫砂锅里里外外全部都是无涂层,健康无釉,干净清爽,磨砂质感,用手能直接摸到紫砂的真材实料,我试了用指甲尖轻弹锅盖或锅体,紫砂材质能发出清脆且悠扬的回响声,听声音都能感受到一口好锅所带来的愉悦。
声音听完了,接下来说一下使用,因为是第一次用砂锅,没有经验,听说砂锅需要开锅和养锅,于是我去网上做了功课,总结如下:
紫砂锅总结
1. 先用白醋清洗,取代洗洁精(这一部其实是为了避免洗洁精渗透进砂锅天然形成的微小气孔怕冲洗不干净,我觉得洗这一步随意)
2. 用淘米水泡三天,(这样永远不会开裂)
3. 在保证锅外底部干爽无水的前提下,内部加水,小火煮开,转中火放米,煮开再转小火,熟后静止放凉再一夜,倒掉,然后底部涂油养着。(这一步也是为了保证今后的使用不会开裂,我觉得最后这部涂油可以省去,又不用来炒菜,只用来煲汤煮粥,就不需要底部涂油)
但是也有的说砂锅不用开锅也不会裂,不知道我做了上面这些步骤是不是无用功,做了总比不做好,开个锅增加保险系数。
这款紫砂锅可用于多种灶台,比如明火,电炉等,我家是玻璃灶台的平面电炉,使用这口锅很方便,但如果刚开始用小火加热会比较慢,于是我就索性开到中大火,加热速度变快了,也没出现异常炸裂的情况,可能是锅质量本身很好,也可能是我准备工作淘米水养锅泡三天起效了。
第一次加热是用白水煮白米粥,也是开锅的步骤之第三步,煮好的粥放凉后倒掉洗净,晾干后准备用它来炖鸡汤,炖银耳汤,各种各有粥类,非常适合煲汤和煮粥,锅的容量比我预计的大,高度和宽度都可以放入一只不是太大的整鸡。
说一下开箱感受,箱子整体亚米用气泡膜全方位包裹,保护到位,箱子外部没有王源吉广告画就是普通牛皮纸箱子,打开箱子以后,内部包裹有王源吉防尘袋和宣传册,还配了附件一双防烫手套,一个防烫垫子。锅盖和锅体分别装在王源吉的防尘袋里,并分别安全地卡在防撞泡沫格子中。锅体刻有王源吉和宜兴紫砂的字样。开箱全过程无异味,新锅体都没一点味道,非常棒。只是第一次加热煮沸的时候仔细闻稍微有点味道,第二次煮沸就基本没有了。
注意,砂锅炖煮时,不要将汤水溢出,还要防止受热不均,以防裂开,所以关火以后最好让锅在炉子上自然冷却,不要马上离火端到冰冷的台面,预防温度突然变化可能导致炸裂。想要用一口好锅做出美味的佳肴,做功课必不可少,我把我做的功课和实际操作的经验都总结在这里了,希望对大家有帮助。
