不用肠粉机在家做爽滑肠粉

大家都在求肠粉机,我也是求"机"战队的一员。

在没有肠粉机的日子里,想给大家介绍一个不需要肠粉机也可以在家不算很方便(我比较诚实哈哈哈)地做出肠粉的菜谱。 只要家里有平底盘子,大的蒸锅/深底平底锅就能做啦

首先在锅里加水煮开,因为准备时间很短所以可以先把蒸锅做起来 



 肠粉材料: 水475g,澄粉100g,粘米粉80g,玉米淀粉10g。
把粉类混合之后加入水用蛋抽做成肠粉水

准备一个平底盘子(其实方的比圆的好,我实在没有哈哈哈),盘子先抹一层油,不要吝啬抹油噢,不然粘了不但做出来不好看下一片之前要洗好久。倒入一层薄薄的肠粉水,再加入自己喜欢的配料。



可以加虾米肉末,我个人是忠实的鸡蛋肠粉爱好者,每次都加双蛋才满足。



做鸡蛋肠粉,鸡蛋要事先打散,每次倒入自己喜欢的量就可以,在撒一点葱花就可以准备蒸啦。

其实不用蒸架会比较好,因为水会让盘子一直是水平的不会一边厚一边薄。

我用蒸锅盘的那种爪子(忘了叫什么)把盘子夹到锅里,盖上锅盖大火三分钟。等肠粉表面微微皱起就可以出锅啦。开始不是很熟练还会把水弄到盘子里,后面就越来越上手了。

蒸好之后用铲子铲起来放到盘子里一条肠粉就做好啦!方盘子用搅拌分割面团那种铲板比较好,这种圆形盘子的用翻拌蛋糕糊那种硅胶铲比较方便,其实也没什么讲究哈哈

这里是三片的肠粉,开始做特别不上手,做了半个小时😂😂,后面的就好一些了。

这里教大家做酱汁,其实要是嫌麻烦把生抽加点植物油煮熟也可以滴。
想味道更丰富的话,先在锅里倒入一点植物油,加热之后加入蒜蓉小火炒一下。加入生抽和一点水,再加入一点盐,鸡粉和糖调味,我觉得肠粉的酱油里糖很重要,最后加入老抽调色就可以出锅啦。比例什么的自己尝尝嘛我也是很随意的。

当当当!是不是看起来很有食欲!虽然比不上国内最爱的那家,但比起之前山鸡村的那家肠粉完全不输,超好吃 !
