肠粉绝对算得上广东乃至全国各地人民喜爱的传统美食,在广州的老城区每隔几十米一定能找到一家在卖肠粉的店铺。 作为一个广州银,炸鸡从小吃过的肠粉大概可以绕地球三分之一圈,甚至小时候也偶尔萌生过长大要摆摊卖肠粉的“理想”。

到了洛杉矶之后,发现洛杉矶可能是全美粤菜最丰富的地域,思乡情切,所以就把洛杉矶的肠粉几乎吃了个遍,经过大量的品尝和踩雷,自觉的将在洛杉矶吃过的肠粉概括成下面四种流派并分别盘点一下各个肠粉流派中值得收藏的几家餐厅。诚意献上,希望大家喜欢,有不到之处,也请留言指点一二。

一份好的肠粉做出来,应该是“白如雪,薄如纸,油光闪亮,香滑可口”。但是要造就出一碗好吃不腻的肠粉来,起码也得花上数年的功夫。


抽屉式肠粉

抽屉肠粉是用好几层蒸盘的肠粉机做成的。蒸盘就是一层铁板,一般是将米浆倒入蒸盘,加上馅料蒸个一分多钟就完成了。一般是早餐店或者路边摊会使用这种方便快捷的制作方式。

布拉肠

布拉肠顾名思义是将米浆倒在布上蒸的肠粉。由于布拉肠粉制作比起抽屉式肠粉更繁琐也很考验技术,一般会出现在粤式酒家。

猪肠粉

虽然叫猪肠粉,但肠粉本身并没有用到任何内脏。将蒸好的粉皮卷成长条形再切成段做成的猪肠粉。一般会是杂酱猪肠粉,嘟嘟猪肠粉或者炒猪肠粉的形式。

甜品肠粉

除了传统的肠粉外,前几年用蒟蒻/凉粉做成的甜品肠粉也火了起来。比较常见的口味是芒果,榴莲和香蕉。

银潮美食的肠粉是我的最爱之一,总是会起个大早专门去吃一份肠粉加双蛋。他们家让我想起广州用饭盒装着的鸡蛋肠粉,上面淋一勺自制豉油。虽然没有华丽的外表,但是那地道又朴实的味道着实让人着迷。

推荐点牛肉肠粉加双蛋,牛肉给的很足且口感很嫩滑,与细腻爽滑的肠粉十分合拍。如果肠粉不够饱,他们家的粥平价大碗,但是口味比较普通,相比之下我会建议点一碗云吞面。云吞各个大颗饱满,猪肉鲜美,还有虾仁哦!

*店家偶尔有一两次忘记给我加蛋,所以记得下单的时候强调一下加鸡蛋,另外,这家只收现金哦!

开平老华侨经营的正宗肠粉

Mr Champion的肠粉老板是开平人所以口味比较还是十分正宗的。Mr Champion的肠粉价格与银潮差不多,每份有四条肠粉,卖相都特别规整,口感偏软。虽然豉油看起来颜色很淡,但味道却意外是偏浓郁的。 我个人不是很推荐鲜虾肠粉,相比起来牛肉肠的料足而且肠粉会吸收到肉汁。记得加鸡蛋哦~

凯旋宫是一间相对高级且专攻粤菜的酒楼。而它在Pasadena开的新店金凯旋宫因为地理位置和菜单的原因,除了华人主流市场外还有很多外国顾客。从他们排队的耐心程度与娴熟的拿筷手法就能看出他们对喝早茶的热爱。

如果你喜欢炸两肠和鲜虾肠粉,那一定不要错过集两者优点于一身的金沙虾肠粉。虾肉的鲜甜加上油条的酥脆绝对让你一试难忘。

除了招牌的金沙虾肠粉之外,凯旋宫老店还有全LA最高大上的龙虾肠粉。一份肠粉使用了一整只鲜活的龙虾,龙虾身上的肉做成肠粉,剩下的龙虾会用葱姜爆炒摆在一边。$38的价格相当于享用了两道龙虾做的菜肴,完全超值哦!

百吃不腻的百花炸兩腸

名流山庄坐落于早茶市场竞争激烈的Monterey Park,但其偏高的早茶价位丝毫不影响它的人气。他们家的特色是口味多,品质好,就连肠粉的选择也丰富过大部分早茶餐厅。

名流山庄的的招牌肠粉那一定非百花炸两肠莫属。塞得满满的虾肉让人感觉不像在吃肠粉,而是脆皮虾滑。如果你爱吃偏甜口味的,可以试试我最爱的一款,同时也是他们家比较特别的金粟叉烧肠。玉米和其它蔬菜的清甜中和了叉烧肉的腻,再搭配上特质的豉油,你一定会爱上它。

老字号出品 口感嫩滑口味传统

海港大酒店算是老字号的粤式酒楼了,味道比较地道所以很受本地人的欢迎。虽然是老字号,但店里却见不到穿梭在座位间的点心手推车,而是全部采用点单的形式。

海港的肠粉都比较传统但是肠粉还算是偏薄且比较滑的,不管是点传统的鲜虾肠还是热乎乎的狗仔鸭肠粉煲都是不错的选择哦!

听说很多人被他们家的凉瓜鸡丝肠粉惊艳了,不介意吃点“苦”的小伙伴不妨点来试试。

芫茜肠粉推荐给爱吃香菜的你

十点之后永远是大排长龙的利苑也是一个老字号粤菜茶馆。他家的价格比起别家绝对算是良心的了,点心一律都只要$2.99哦。

利苑的肠粉种类很全,从布拉肠,金沙肠到猪肠粉,还有肠粉烩排骨,别家的特色在这里也几乎都能找到。说到利苑就不得不提他们家的芫茜肠粉,简直是像我这样香菜党的福音。净肠粉加上香菜叶,没有任何多余的肉和海鲜,白里透绿纯粹又好看。豉油的清甜加上清新的香菜,在早茶的点心里绝对算得上是一股清流。

7. 鸿德品位 Longo Seafood Restaurant 2730 Prospect Ave, Rosemead, CA 91770

口口脆的招牌金丝红米肠

虽然是17年新开张的粤式海鲜酒家,但因其美味的菜肴和茶点,开业不到一年的时间就门庭若市。 据说他们家还请来了利苑海鲜酒家的老师傅呢!

他们家肠粉的特色就是肠粉摆盘不像别的布拉肠是白肠粉卷着内馅,他们家的肠粉的呈现方式比较像抽屉式肠粉,把馅料与肠粉融合在一起。金丝红米肠作为招牌肠粉之一,并没有像别的酒楼一样裹入油条和虾肉,而是在柔韧有嚼劲的净红米肠上撒了金银色的天妇罗碎,朴实又不失华丽,吃起来并不会过于油腻。

*他们家不少肠粉配了香菜,不爱吃和爱吃香菜的小伙伴们点的时候注意了哦!

肠粉品质稳定但缺少惊喜

作为LA最受欢迎的港式海鲜酒楼之一,周末中午不在这里排一两个小时基本上是喝不上早茶的。

虽然说凯悦的早茶品质在LA地区绝对算是数一数二的了,但这里的肠粉比起别的菜品来说算是中规中矩。用一句话形容就是:出品稳定,保质保量。其中鲍汁玉子豆腐肠算是比较独特的一品。用鲍汁代替了肠粉的豉油,搭配炸过的玉子豆腐就不会觉得很腻。

如果你不想花时间去酒楼排队点菜但又想吃肠粉,虾林小厨是个不错的选择。虾林小厨坐落于正方超级市场Food Court内,虽然环境比较嘈杂,但是逛完街可以坐下吃一碟热乎乎的肠粉还是很不错滴。他们家的肠粉不但选择很多而且相当平价,从$1.5到$2.75不等,只需要$2就可以买到一碟人气很高的是炸两肠。虽然肠粉的口感可能不如大酒店的那么好,味道还是非常对得起它的价格。

他们家除了肠粉还有云吞,鱼蛋,牛杂等港式小吃。

潮楼和凯悦离得很近,价格非常实惠,平时生意不错但比起不至于会排很长的队。潮楼的肠粉特点是皮很薄也很嫩滑,脆肠粉的选择比较多,甚至还有网丝一品肠这种以冰花煎饺造型呈现的肠粉。如果你喜欢炸两但又想试试新奇的口味,欢迎来试试鲜金菇脆两。这款肠粉是用炸得香脆的金针菇代替油条,口感与嫩滑的肠粉在一起意外的特别搭。

潮楼外面还有外卖点心部哦,如果对口味比较担心的话可以先去点心部买来试试。

作为一家在有许多越南移民居住的Westminster可以喝早茶的餐馆,他们家部分茶点着融合了越式风味。虽然他们家的早茶点心价格并不低,但能在这里吃到茶点已实属不易了。这家的部分肠粉也是十分有越南特色,比如煎虾米肠粉和炸两肠都会配由酱油,芝麻混合了海鲜酱做成的酱汁。不同于一般的豉油,海鲜酱的鲜香让你忘记了油腻。

连锁港式餐厅的快餐式肠粉

面面店作为凯悦旗下的港式连锁餐厅还算是名气挺大的。在面面店能吃到各种粥粉面和烧腊小吃。面面店的肠粉虽然选择不少,但口感只能说OK,而且馅料不算很足。推荐一下他们家的炸两肠,肠粉皮薄,油条吃起来也很香脆,还配了三种口味的蘸酱,如果刚好来面面店吃饭,这款肠粉还是值得一试的。

最有人气的路边蒸肠粉

位于Monterey Park的Hong Kong Café 也算是知名度很高的一家港式茶餐厅,店面不大所以可能要等一会儿位。路边蒸肠粉和菠萝油是我去他们家必点的两道菜,而且几乎每桌都会见到。切成段的猪肠粉上面浇了海鲜酱和花生酱并撒上了芝麻,店家还特别用心地把蒜蓉辣酱单独放在边上的碟子里,照顾了不爱吃辣的顾客。

用心追求高品质 猪肠粉也不简单

厨艺餐厅的老板对口味和品质的追求高是很出名的,所以他们家出品的猪肠粉口味也一定不会让你失望。捞酱肠粉不但价格便宜而且分量很大,上面加的是海鲜酱,花生酱和白芝麻。XO酱炒肠粉搭配了大量的豆芽,有一种干炒牛河的Feel。猪肠粉炒到干爽带点焦香,口味偏清淡,这样更能吃出XO酱鲜香。

一碟有香港情怀的啫啫猪肠粉

海皇粥粉面不仅名字特别有香港的情怀,还是一家性价比相当高的一个港式简餐。因为店面不大所以中午去偶尔会需要等位哦。

虽然他们家公认的招牌是粥,但啫啫猪肠粉绝对算是店内人气最高的小食了。他们家提供两款猪肠粉,分别是啫啫海皇肠粉和啫啫牛腩肠粉。啫啫海皇肠粉其实就是炒净肠粉,口味比较清淡,但胜在肠粉的口感很好,口感带点弹性不会因为炒制而过于软烂。啫啫牛腩猪肠粉只比海皇肠粉贵了$2,但配有很大块牛腩,最重要的是肠粉浸在牛腩汤汁带有浓郁的肉香,绝对是物超所值的一款猪肠粉。

选择恐惧症的福音-经典双拼肠粉

尚品甜艺作为一家开了四年多的港式甜品店应该被很多人所熟知。 我很早之前就为了吃榴莲拼芒果肠粉特意去了一趟尚品甜艺。

他们家肠粉的特点是粉皮里加了椰奶,吃起来像是椰奶果冻一样。肠粉里面是整块果肉和奶油,上面还淋了酸酸甜甜的芒果酱。个人更喜欢榴莲肠粉,感觉榴莲的口感跟奶油融合得更好。

顺便一提,他们家不但有甜品肠粉,还有河粉哦!

Q弹量足的芒果肠粉

如果你既想吃热乎乎的混酱猪肠粉又想吃酸甜清爽的芒果肠粉,来甜入心就没错啦!这里有港式小食和各类甜品,还有独特的紫薯口味甜品和用冰碗装的杨枝甘露哦!

甜入心的芒果肠粉皮比较光滑Q弹,比尚品稍微薄一些。肠粉里面奶油给的很足,芒果的熟度也够,吃完很有满足感。
