肠粉是广州茶楼、酒家早茶夜市的必备之品,同时也是很多广州市民早餐的必选之品,老广记忆中的美食之一。

所以来到美国之后,我真的特别想吃一次肠粉缅怀一下。可惜这里的肠粉店不仅少而且贵!😢一碟广州仅售 8rmb的牛肉肠粉,这里居然也要 $8😂这波调整我接受不了😂

所以我一怒之下,研究了各种家里弄肠粉的方法,即便没有专门制作肠粉的粉,也可以做出地道广州味的蒸肠粉👌






首先准备好各种粉质材料:

🌟 粘米粉

🌟 澄粉

🌟 粟米粉

🌟 清水


材料的量或者比例如下👇













🌟 将各种粉量好后混在一起,然后倒入清水搅拌。




🌟 将水和粉大概混合后会出现很多结块,难以拌均匀。此时可以将粉浆过筛,一边过一边在筛子里面搅拌,把结块的粉浆搅开。经过这样一番过滤后,出来的粉浆便十分细腻了。




🌟 在盘底抹一层油,倒入一汤勺的粉浆(不要贪多,一勺就够了,这样蒸出来的肠粉才会薄而晶莹)。放入洗干净的生菜🥬和切丝的牛肉。




🌟 烧一锅子水,烧开后,放入盘子,合上盖子蒸一分半钟。




🌟 出锅,趁热用塑胶材料制作的板子沿着盘边刮起肠粉,刮到一定长度就翻一下,直到全部刮起。






以此类推,我做了好几盘。那些粉浆的料足够做六盘。成品如⬆️图。是不是看上去很香呀~
