玛德琳·帕克特（Madeline Puckette），

侍酒师大师公会（CMS）认证侍酒师，曾在多家餐厅担任侍酒师，拥有丰富的葡萄酒理论知识与实践经验。她创办的WineFolly网站（葡萄酒评论家）荣获2013~2014年度葡萄酒博客奖，并与诸多全球葡萄酒品牌，以及侍酒师大师公会等机构建立合作。

2012年，玛德琳被Quora评为葡萄酒作家；2015年，被著名葡萄酒杂志《葡萄酒爱好者》评为“40个40岁以下的葡萄酒潮流引领者”之一。

葡萄酒品鉴

闻香HOW TO TASTE: SMELL

闻：把酒杯放置于鼻下，做好“准备”后开始嗅闻。然后轻晃酒杯，再闻。这一次，闻的时间更长，更缓慢，并保持动作优雅。一边摇晃酒杯，一边慢慢思考。

芳香：摇晃酒杯，之后试着从酒杯的不同位置嗅闻葡萄酒的香气。浓郁的果香可在酒杯下杯口闻到，而花香和挥发性酯类香可在上杯口闻到。

学会摇杯：摇晃酒杯可以使葡萄酒气味释放到空气中。

当长时间闻香后：鼻子觉得疲惫时，可以闻一下前臂来平衡。

香水：品酒时避免使用香水。

一类香气（Primary Aromas）：一类香气（品种香）来自葡萄果实。每种葡萄都会带有特定的香气，如白葡萄品种长相思闻起来有醋栗味或刚割完的青草味。一类香气的范围也取决于葡萄酒酿造地的气候和陈化时间。

二类香气（Secondary Aromas）：二类香气（发酵香）来自葡萄酒的酿造阶段，特别是酵母和细菌所起的反应。

例如霞多丽葡萄酒中的黄油香气就是来自一种特殊的细菌的作用。

三类香气（Tertiary Aromas）：三类香气（陈年香）来自葡萄酒的陈化以及与氧气相互作用的过程。如陈年香槟和雪利酒中的坚果味就是多年陈化的结果。

葡萄酒的缺陷：有时会在酒里闻到某些不正常或者令人难以接受的味道。学习认知这些味道有助于我们分辨列子葡萄酒和优质葡萄酒。

变质：绝不止是保质期的事

软木塞污染

又称为TCA（主要是2,4,6—三氯苯甲醚）污染。

大部分被软木塞污染的葡萄酒有强烈的湿纸板、淋湿的狗或地下室发霉的气味；有时却只是缺少香气，并带有轻微的霉味。但别担心，可以将这类有问题的葡萄酒退给卖方。

还原

罪魁：硫醇、硫化合物。

还原味闻起来像煮过的大蒜和卷心菜，是由于葡萄酒在瓶中缺少氧气而产生。醒酒或用银勺搅动酒液可以改善这种味道。

氧化

又称为“马德拉化”。

氧化的葡萄酒闻起来很单调，颜色呈棕色，像苹果氧化的颜色。红葡萄酒由于酚类物质（如单宁）和氧气相互作用变得干涩带苦味；白葡萄酒则有苹果酒的气味。

紫外线破坏

又称为“光击”。

放置在超市里长时间受灯光照射或被阳关暴晒的酒容易出现光击显现。而光击会引起还原。因此，为了防止葡萄酒受到光损害，要避光储存，避免放在搁板上。

高温破坏

又称为“温度过热”。

葡萄酒在82℉（华氏温度，约为27.8℃）会迅速变质，90℉（32℃）为温度过热。温度过热的葡萄酒闻起来很舒服，像焦糖和煮过的水果，但尝起来单调，没有序幕、中场、结束的区别。高温破坏还会引起焦化。

喷洒和气泡

在非起泡酒中出现。

有时，葡萄酒会在瓶中二次发酵。如果是静止酒，就可以轻易地从葡萄酒是否起泡辨别出，而且由于酵母和蛋白微粒的存在，这类酒还会有点混浊。
