Book Abstract

麦芽的发芽程度对于麦芽的性能也很重要。如果发芽程度不够，很多发酵所需要的物质还没有形成，还不能够用于酿制啤酒，这样麦芽利用率就很低。如果发芽过度，很多原来应该出现在啤酒里的营养就被麦芽给消耗了。发芽程度可以用肉眼观察麦麸下面的芽头的长短来判断。一粒发芽完全的麦芽头的长度应该是谷粒长度的3／4-1倍长。比这个短，就表明发芽不完全，比这个长就是发芽过度了。在图5.1中，麦芽头的长度为整个麦芽高度的3／4～1倍。
发芽程度不同的麦芽的最大区别在于酶的含量，以及对糊粉层的破解程度不同。各种发酵程度的麦芽在酿造中都会被使用。笼统地说，发芽程度高的麦芽，淀粉转化出糖的步骤比较简单；发芽程度低的麦芽的出糖工艺略为烦琐，但它可以给啤酒增加其独有的风味。
麦芽生产的过程就是使大麦发芽，然后在适当的时机停止发芽，烘干，并通过震荡的方法除掉麦芽颗粒上的芽头和小须根。处理完的麦芽看上去像颗饱满的麦粒，吃起来应该像烤花生一样香脆。加热烘干的过程中，有一些麦芽内部的酶也同时消失，留下部分活性酶。活性酶含量越高的麦芽，它的糖化能力也就越高，它就能转化更多的淀粉成为麦芽糖。这些活性酶对麦芽淀粉转化为糖的各个步骤又有不同的作用。
