《超市生鲜商品管理》：
（3）补货时要利用工具（地车、平板车、五段车、周转箱）进行补货，以减少体力支出，提高工作效率。
（4）叠放在栈板上的货品，应注意重的、体积大的放在下层，体积小、易坏的在上层，须摆放整齐。
（5）外制熟食补货时商品尽量靠近陈列架、避免影响顾客购物。补货完毕后速将工具、纸箱等整理干净。
（6）补货完毕后须检查价格是否与商品对应。
（7）补货时商品要轻拿轻放，避免重摔，影响商品鲜度。
（8）自制熟食，补货时要注意杯盘是否干净。
四、水产订货、补货原则
（一）水产订货的参考原则
1.了解市场
实际下单前务必先行了解市场的各种季节鱼类、虾、贝、蟹等商品的价格、规格、鲜度、商品组合、市场变动等情况。
2.了解周边商圈客层的需求
通过对顾客的访问调查，了解附近商圈的客层、顾客数，人潮分布时间及顾客的需求，以便作为订货时的参考依据。
3.永续订单与续订货原则
续订货的准确度是相当困难的，前一天好卖的鱼才订货，不好卖的鱼不订货是错误的，实际算出DMS才会正确，同时为了避免续订货商品被忽略掉，要求续订货的规定要更明确。
（1）商品。依照每月商品群的货号建立永续订单（建档）以求商品齐全，活鱼鲜鱼部分的品项数不得少于30个。
（2）季节。续订货时以季节性商品为主，非季节性水产品，如肉质肥美而且适合区域性顾客，也应该同时订货。
（3）数量。订货的数量应该考虑到第二天的天气及是否是节日、节庆，是否是快讯促销品项而与平常日有所不同。假日时外出郊游及到餐厅的人较多，因此烧烤的鱼、虾、贝类及餐厅用鱼应多订些；平常日时家庭食用的水产品多订些，春节时黄鱼、带鱼多订些。
