（5）确定副食品种和数量在已确定主食用量的基础上，依据副食应提供的蛋白质质量确定。副食应提供的蛋白质的量一总的蛋白质量一主食中蛋白质的量。动植物性食物以及豆类及其制品是副食中蛋白质的主要来源。为保证蛋白质质量，要求副食中2/3蛋白质由动物性食物提供，1／3由豆制品提供。其他蔬菜的品种和数量可根据不同季节市场的供应情况，并考虑其与动物性食品和豆制品的搭配的需要来确定。
（6）确定油脂的摄入量油脂的摄入应以植物油为主，植物油的量一脂肪总量一确定的各种食物中提供的量。
（7）食谱的评价与调整根据以上步骤设计食谱后，还应评价该食谱是否合理，并及时给予调整。一般情况下，允许食谱提供的能量和各种营养素的量与参考摄人量（DRIS）比较相差在10%上下；每天的能量、蛋白质、脂肪和糖类的量出入不大，其他营养素以一周为单位进行计算和评价。评价内容主要包括：各大类食物是否齐全，是否满足食物多样化的要求？各类食物量是否充足？能量和营养素的摄人量是否适宜？三餐能量分配是否合理？优质蛋白质是否占总蛋白质的1／3以上？三大产热营养素供能比是否合适？
2）食物交换份法该法是将常用食物按其所含营养素量的近似值归为五类：谷薯类、动物性食品、豆类及其制品、蔬菜水果类和纯能量食物，计算出每类食物每份所含的营养素值和食物质量。每个交换份的同类食品中蛋白质、脂肪、糖类等营养素含量相似。因此，在制订食谱时同类的各种食品可以相互交换。由此可根据对象不同的能量需要，按蛋白质、脂肪和糖类的合理分配比例，计算出各类食物的交换份数和实际重量，并按每份食物等值交换表选择食物。本法对患者和正常人都适用。相对于营养成分计算法，食物交换份法简单易行，易于被非专业人员掌握。
